This knife set features a revolutionary FC61 steel core, protected by 48 layers of damask steel, with a double ice-hardened FRIODUR blade. Fine carbide distribution ensures durability with a 61 Rockwell hardness. Each hand-honed blade uses the Honbazuke method for a sharp edge. Hand wash recommended. Includes: 3.5" paring knife, 4.5" utility knife, 5.25" prep knife, 7" Santoku knife, 6.5" Nakiri knife, 8" chef's knife, 9.5" bread knife, 9" honing steel, kitchen shears, and bamboo easel block.
